Preparing the base and rice
Rinse the sushi rice in cold water until the water runs clear, then cook it according to the package instructions. Keep it covered and warm.
Cut the boneless chicken thighs into bite-sized pieces. Thinly slice the yellow onion and diagonally chop the spring onion, separating the white parts from the green parts.
In a small bowl, lightly beat the eggs with a fork, only 4-5 times. The secret to a creamy Oyakodon is that the egg whites and yolks should not be completely blended.
Chef's tip
Do not overbeat the eggs: partially separated whites and yolks provide the authentic, silky texture characteristic of this Japanese dish.
If you want an extra crunchy touch, you can sprinkle thin strips of nori seaweed on top just before serving.
