Preparing the dough
In a large bowl, mix the lukewarm milk with the dry yeast and sugar, leaving them for 5 minutes to activate. Add the flour and salt, then knead for 8-10 minutes until you get a smooth and elastic dough. Cover the bowl with a clean towel and let it rise in a warm place for about 1 hour, until doubled in size.
Preparing the curry filling
Cut the boneless chicken thighs, potato, carrot, and onion into very small cubes (about 5 mm) so they cook quickly and are easy to fill into the dough. In a skillet, heat a tablespoon of sunflower oil and sauté the onion until translucent, then add the chicken and brown lightly.
Add the carrot, potato, curry powder, and soy sauce. Pour in 100 ml of water and let everything simmer over medium heat for 10-12 minutes, until the vegetables are tender and the sauce has reduced completely and thickened. Let the filling cool completely before assembly.
Chef's tip
Make sure the curry filling is completely cool before filling the dough. If it is warm, it will soften the dough and make sealing difficult.
Carefully sealing the edges is essential to prevent the buns from opening and the filling from leaking into the hot oil during frying.
