Preparing the tuna and marinade
In a small saucepan, mix the soy sauce, brown sugar, grated ginger, and crushed garlic. Let the mixture reduce slightly over low heat until it becomes slightly syrupy, then set it aside to cool.
Rinse the tuna steaks and pat them dry with a paper towel. Dip each steak in the prepared marinade, ensuring it is coated on all sides, then roll it in the black sesame seeds to form an even crust. Let the tuna marinate in the refrigerator for at least 30 minutes.
Preparing the salad and cooking the tuna
Meanwhile, prepare the salad dressing: in a small bowl, mix the olive oil, honey, water, and rice vinegar. Season with salt and pepper to taste.
Chef's tip
For an even crispier crust, you can use a mix of black and white sesame seeds.
Be careful not to overcook the tuna, as it dries out very quickly. The inside should remain vibrant and pink.
