Ingredients
Preparation method
Preparing the bean filling
Peel and finely chop the onion and garlic. Heat 20 ml of sunflower oil in a frying pan and sauté them over medium heat for 3-4 minutes, until translucent and fragrant.
Add the drained black beans, ground cumin, smoked paprika, and half of the fine salt. Mash the beans with a fork or potato masher until you achieve a thick, dense, and creamy purée. Allow the mixture to cool to room temperature.
Preparing the masa dough and assembling
In a large bowl, mix the corn flour with the white wheat flour and the remaining fine salt. Incorporate the remaining sunflower oil (40 ml) and gradually add about 250-300 ml of lukewarm water. Knead for a few minutes until you get a soft, pliable dough that no longer sticks to your fingers.
Chef's tip
For an extremely tender dough texture, let the dough rest for 10 minutes before shaping, allowing the corn flour to hydrate completely.
If you want extra authentic street-style heat, add a few chili flakes or finely chopped jalapeño pepper to the bean purée.
