Sezamo
Preparation method
Preparing the base and rice
Rinse the sushi rice in cold water until the water runs clear, then cook it according to the package instructions (1:1.2 water ratio). Once cooked, turn off the heat, cover with a lid, and let it steam for 10 minutes.
Beat the fresh eggs in a bowl with a pinch of salt. Heat a non-stick pan greased with a little oil, pour in the beaten egg in a thin layer, and cook a flat omelet (jidan) for 1-2 minutes on each side. Transfer to a cutting board, roll it up, and slice into thin strips.
Cooking the chicken and sauce
Cut the boneless chicken thighs into bite-sized cubes. Season the meat with a pinch of salt and a pinch of ground black pepper, then coat the pieces in cornstarch, shaking off any excess to ensure a crispy crust.
Chef's tip
For the aesthetic mayonnaise pattern typical of Korean street food, place the mayonnaise in a small food bag and snip off a tiny corner to drizzle very thin lines.
If you prefer a spicy kick, add a few drops of Sriracha sauce mixed with the mayonnaise or sprinkle with some fresh chili pepper.
