Preparation method

Preparing and boiling the lentils

1

Rinse the lentils thoroughly in several changes of cold water until the water runs clear. Bring the lentils to a boil in a pot with 750 ml of water, half of the ground turmeric, and half a teaspoon of sea salt.

2

Simmer over medium heat for about 20 minutes, skimming off the foam that forms on the surface. When the lentils are completely soft, mash some of them with a whisk or a wooden spoon for a thick and creamy texture.

Preparing the aromatic curry base

1

In a deep pan, heat one tablespoon of clarified butter (ghee). Add the finely chopped yellow onion and sauté over medium heat until golden and translucent.

Chef's tip

The secret to an authentic Lasooni Dal lies in browning the garlic over gentle heat: it must be golden and sweet, without blackening, to infuse the clarified butter with a deep flavor.

If you want an even richer consistency, you can add a squeeze of fresh lemon juice over the dal at the end to balance the sweetness of the browned garlic.
