Începe-ți ziua cu un mic dejun plin de culoare și nutrienți! Această omletă cu legume și avocado este gata în doar 15 minute, oferindu-ți o combinație perfectă de proteine, grăsimi sănătoase și prospețime. Ideală pentru diminețile în care vrei ceva rapid, dar extrem de gustos.

Ingredients overview
- 20 g of red onion
- 40 g of red kapia pepper
- 50 g of tomatoes
- 25 g of button mushrooms
- 20 g of block cheddar cheese
- 2 pcs of medium eggs
- 45 g of avocado
- 10 g of fresh baby spinach
- 1 tbsp of sunflower or rapeseed oil
- 1 pinch of fine table salt
- 1 pinch of ground black pepper
- 1 handful of fresh cress (optional)
Preparing the ingredients
Peel the onion and chop it finely. Cut the kapia pepper and tomato into small cubes. Clean the mushrooms and also cut them into cubes. Finely grate the cheddar cheese. Crack the eggs into a small bowl, season with salt and pepper, then beat them well. Slice the avocado into thin slices.
Cooking the scramble
Heat the oil in a medium pan over medium heat. Add the onion and mushrooms, sprinkle with a little salt and sauté for 3-4 minutes. Add the tomatoes and kapia pepper, cook for another 1-2 minutes. Reduce the heat to low, pour in the beaten eggs, add the baby spinach and grated cheddar cheese. Cook, stirring constantly, for 2-4 minutes until the eggs are set but still creamy.
Serving
Transfer the mixture to a plate, top with the avocado slices and serve immediately. Optionally, sprinkle with fresh cress for extra flavor.
Chef's tip
You can serve the scramble with a slice of toasted wholemeal bread for an even more filling breakfast.
