- 16 g of prepared and cooled sushi rice
- 20 g of fresh salmon fillet
- 1 pinch of wasabi paste
- 1 teaspoon of soy sauce
- 1 teaspoon of pickled ginger for sushi

Cut the salmon fillet into individual slices, cutting against the grain for optimal texture.

Take a small portion of rice in your right palm and form a small oval. With your index finger, take a small amount of wasabi paste and spread it on the fish slice. Place the rice over the fish and shape them together to form the nigiri piece.

Serve the nigiri sushi pieces with soy sauce (in which you can add wasabi to taste) and pickled ginger to cleanse the palate between tastings.
Chef's tip
Pickled ginger pleasantly neutralizes the taste and aids digestion. Always use sushi-grade fish (fresh and safe for raw consumption).
