Preparing the tuna

Cut the tuna fillet into long, thin strips, about 1 cm thick. Make sure to cut against the grain for optimal texture.

Keep the tuna chilled until assembly.

Assembling the sushi

Halve the nori sheet and place it on the bamboo mat with the shiny side down.

Chef's tip

Always wet the knife blade before each cut to get clean sections and prevent the rice from sticking.

Serve immediately with soy sauce and pickled ginger to maintain the freshness of the tuna and the texture of the nori seaweed.
