Preparation method
Meat preparation and breading
Cut the beef into thin slices and pound them gently with a meat mallet between two sheets of plastic wrap until they reach a uniform thickness of 4-5 mm. Season the slices generously with fine table salt and ground black pepper.
Prepare three shallow bowls: one with white wheat flour 000, the second with lightly beaten eggs, and the third with breadcrumbs. Dredge each beef slice in the flour, then dip in the egg, and finally coat in breadcrumbs, pressing firmly for a well-adhered, crispy crust.
Heat the sunflower oil in a large frying pan over medium heat. Fry the beef cutlets for 2-3 minutes on each side until golden and crispy. Remove them onto paper towels.
Chef's tip
For an extra touch of smoky flavor characteristic of Mexican cuisine, you can add chipotle peppers in adobo sauce to the sandwich alongside the jalapeño slices.
Well-drained fresh mozzarella torn into strips is an excellent substitute for traditional Oaxaca cheese (quesillo), offering that unmistakable stretchy texture with every bite.
