Preparation method
Preparation and browning
Cut the bacon slices into small 1-2 cm pieces. Cut the beef steak into bite-sized thin strips. Finely chop the garlic and jalapeño pepper. Wash the spring onions and trim only the root ends, keeping the bulbs and stems intact.
In a deep saucepan or cast-iron skillet, fry the bacon over medium heat until golden brown and crispy (approx. 5-6 minutes). Remove the bacon onto a plate lined with paper towels, leaving the rendered fat in the pan.
Cooking the meat and making the broth
Increase the heat to medium-high. Add the beef steak strips to the hot bacon fat. Brown them quickly for 3-4 minutes until they change color and begin to release their natural juices.
Chef's tip
For an extra authentic spicy kick from Guadalajara, you can add a few dashes of Mexican salsa verde hot sauce directly to the bowl before serving.
Warm tortillas are traditionally rolled up and dipped directly into the rich, flavorful beef broth.
