PREPARING THE CHOCOLATE LAYER
Start by preparing the mixture for the dark layer. Melt the dark chocolate in a bain-marie. Place the broken chocolate pieces in a heatproof bowl, set over a saucepan with simmering water over low heat (the bottom of the bowl should not touch the water). Stir constantly until the chocolate is completely melted and smooth (approximately 2-3 minutes). Remove the bowl and let the chocolate cool for 2 minutes.
Meanwhile, in a separate bowl, mix 250 g of the total amount of cottage cheese with 1 tablespoon of honey. When the chocolate has cooled slightly, gradually incorporate it into the cheese mixture, mixing continuously until you obtain a homogeneous and dense consistency.
PREPARING THE VANILLA LAYER AND ASSEMBLY
In another bowl, mix the remaining 200 g of cottage cheese with 1 tablespoon of honey and the scraped seeds from one vanilla pod (cut the pod lengthwise and scrape out the seeds with the tip of a knife).
Chef's tip
If you have hazelnuts in your pantry, you can lightly toast them in a pan and crush them to decorate the dessert, giving it a crunchy touch.
