- 400 g frozen strawberries
- 250 g semi-skimmed cottage cheese
- 60 g gluten-free oat flakes
- 20 g almond flakes
- 100 g fresh strawberries for decoration
- 2 tablespoons still water
Start by preparing the strawberry sauce: place the frozen strawberries in a small saucepan with 2 tablespoons of water. Let them simmer over medium heat for 10–15 minutes, until softened. Then mash them with a fork and let the sauce cool for 20–30 minutes.
Meanwhile, in a non-stick pan, toast the oat flakes together with the almond flakes over medium heat, stirring continuously, until golden (approximately 3–5 minutes).
Mix half of the cooled strawberry sauce with the cottage cheese. Prepare 3 glasses of approximately 200 ml and start layering in the following order: strawberry sauce, cheese mixture, oat flakes with almonds. Repeat the layers once more. Finally, slice the fresh strawberries thinly and decorate the parfait. Refrigerate for at least 15 minutes before serving.
Chef's tip
This parfait is an excellent snack. If you want to serve it for breakfast, you can increase the amount of oat flakes to 120 g for a more substantial option.
