In a large bowl, mix the spelt flour, baking powder, and salt. Add the yogurt to the dry mixture and knead until you get a homogeneous and smooth dough. Divide the dough into 5 equal parts and form balls from each piece.
Dust the work surface with a little flour (approximately 20 g from the total amount). Roll out each dough ball with a rolling pin until you get a flatbread about 0.5 cm thick.
Heat a large non-stick pan over medium heat. Cook the flatbreads for 2-3 minutes on each side, until they puff up slightly and turn golden.
Chef's tip
Covering the flatbreads with a towel immediately after cooking is the secret to keeping them soft and flexible.
