Preparation method
Preheat the oven to 230 °C and prepare a baking tray lined with parchment paper.
In a large bowl, mix all ingredients (flour, milk, vinegar, baking soda, and salt). Knead gently only until the ingredients are combined, but the dough remains slightly irregular. Be careful not to over-knead, to maintain an airy texture.
Turn the dough onto the prepared tray and form a round, slightly flattened loaf, with a diameter of approximately 15 cm and a height of 6 cm. With a knife, make two deep cross-shaped cuts on top.
Chef's tip
For optimal results, use buttermilk instead of sweet milk and vinegar, if available. Acidity is essential to activate the baking soda.
