Preparing and Roasting Vegetables
Preheat the oven to 200 °C and prepare a small baking dish (approximately 10 cm × 15 cm).
Peel the carrots and garlic. Cut the carrots into smaller pieces. Place the cut carrots and peeled garlic cloves in the baking dish, pour 1 tablespoon of rapeseed or sunflower oil, add a pinch of salt, and mix well. Bake in the oven for 20 minutes at 190–200 °C. After this time, pour 50 ml of water over the mixture and bake for another 15–20 minutes, until the carrots are soft.
Finishing the Spread
After baking, transfer the entire contents of the baking dish to a blender. Add the lemon juice, extra virgin olive oil, and semi-skimmed cottage cheese. Blend until you get a fine and homogeneous spread. Taste and add more salt if necessary.
Chef's tip
For a more intense flavor, you can add a pinch of ground cumin or smoked paprika while roasting the carrots.
