Un desert tradițional românesc de vară, extrem de fin, aromat și aerat. Spuma delicată din albușuri și piure proaspăt de mure este perfect echilibrată de câteva picături de lămâie și se servește la pahar alături de pișcoturi crocante.
Preparation method
Preparing the fruit
Wash the fresh blackberries thoroughly under cold running water and let them drain on a paper towel. Reserve a few whole blackberries for garnish, and blend the rest finely with a hand blender, then pass the puree through a fine sieve to remove the seeds.
Preparing the mousse
Carefully separate the egg whites of the two fresh chicken eggs into a clean and dry bowl. Beat the egg whites with a small pinch of salt using a mixer at high speed until stiff.
Gradually add the powdered sugar and vanilla sugar while continuing to beat vigorously until you obtain a firm, glossy meringue. Incorporate the lemon juice for stability and freshness.
Chef's tip
For a perfect and stable mousse, make sure the eggs are very fresh and cold from the refrigerator, and the mixing bowl is perfectly clean and free of grease.
Passing the blackberry puree through a sieve is essential to achieve a fine, velvety texture without hard seeds.
