Preheat the oven to 180 degrees Celsius (top and bottom heat). Peel the pumpkin and cut it into cubes. Drizzle with 2 tablespoons of oil, sprinkle with nutmeg, cinnamon, and cardamom. Salt lightly and mix well. Bake for about 20 minutes, until the pumpkin softens.

Place the first part of the dough in a greased pie dish, raising the dough up the sides to create a high border.

Cut the red onion into half-moons and sauté it in the remaining oil until golden. Let it cool, then incorporate the beaten eggs and crumbled feta cheese. Add the rosemary and the baked pumpkin, previously pureed into a fine consistency with a blender. Pour the pumpkin mixture into the dish. From the second part of the dough, cut out eyes, a nose, and a mouth (like a Halloween pumpkin). Place the cut-out dough on top of the filling and seal the edges by pressing with a fork.

Chef's tip

For an even shinier appearance, you can brush the top dough with a little egg yolk before putting the pie in the oven.
