Preparing the mixture
Crumble the cocoa biscuits using a food processor or place them in a plastic bag and crush them with a rolling pin. In a bowl, mix the crumbled biscuits with the lactose-free cream cheese (well-drained of whey), the juice and grated zest from the organic lemon. Taste and add powdered sugar if you want a sweeter mixture, then mix well with a fork.
Wrap the mixture in cling film and leave it in the refrigerator for at least 30 minutes to firm up.
Shaping and serving
Once chilled, take small portions of the mixture and form flat discs. Place a fresh blueberry or a frozen raspberry in the center of each. Carefully shape them into balls and roll them through the grated coconut until uniformly covered.
Chef's tip
For extra flavor, you can add a dash of vanilla extract to the mixture.
