Preparing the Granola and Rhubarb
Preheat the oven to 160 degrees Celsius. In a large bowl, mix the oat flakes, lightly crushed hazelnuts, shredded coconut, and cocoa powder. Melt the coconut oil until liquid, mix it with 4 tablespoons of agave syrup, and pour the mixture over the dry ingredients. Mix everything well until the flakes are evenly coated. Spread the mixture on a baking tray lined with baking paper.
Clean the rhubarb by removing the tough skin and fibers, then cut it into pieces of approximately 5 cm. Sprinkle the rhubarb with brown sugar and place it on the edge of the tray, next to the granola. Bake everything together for 60 minutes, stirring the granola occasionally for even baking.
Preparing the Cream and Assembly
Meanwhile, prepare the cream by mixing the fermented cream with cottage cheese and the remaining 4 tablespoons of agave syrup until you obtain a homogeneous mixture.
Chef's tip
If you cannot find fresh rhubarb, you can use frozen rhubarb or even a well-drained rhubarb compote.
Granola can be prepared in larger quantities and stored for up to two weeks in an airtight container.
