Preheat the oven to 220–225 °C and prepare a medium-sized ovenproof dish (approximately 30 cm x 25 cm).

Cut the bacon into small cubes and place it in the baking dish. Put the dish in the preheated oven and let the bacon brown lightly for about 10 minutes.

Meanwhile, prepare the rest of the ingredients: break the cauliflower into small florets, crumble the telemea cheese, and cut the mozzarella into cubes.
Chef's tip
If you want a vegetarian option, you can omit the bacon and add a little smoked paprika for a similar flavor.
