- 100 g of Lotus Biscoff biscuits
- 150 g of plain Greek yogurt or skyr
Prepare a glass of plain Greek yogurt or skyr. If the glass is full to the brim, remove 1–2 tablespoons of yogurt to make room for the biscuits and prevent overflow.
Insert the Lotus Biscoff biscuits vertically into the yogurt, as many as possible. Leave minimal space between them. The more biscuits you add, the more intense the caramel flavor will be, and the dessert will have a denser structure.
Cover the glass with a lid or food wrap and leave it in the refrigerator overnight, or at least 4 hours. The next day, the biscuits will soften, transforming the yogurt into a creamy cheesecake. Serve directly from the glass.
Chef's tip
For a higher protein version, use plain skyr. If you prefer a sweeter taste, you can add a little maple syrup or honey, although the biscuits are already quite sweet.
