Prepare the ingredients: cut the broccoli into small florets, peel the onion and slice it thinly along with the mushrooms.

Heat the vegetable oil in a medium pan over medium heat. Add the mushrooms and onion, lightly salt, and sauté for 3-4 minutes.

Add the broccoli and baby spinach to the pan and cook for another 1-2 minutes. Make a circle with the vegetables, crack the egg in the middle, season with salt and pepper, cover with a lid, and cook for 3-4 minutes until the egg white is set.
Chef's tip
You can add sesame seeds on top for extra texture and an Asian flavor.
