Preparation method

Preheat the oven to 180 °C. Prepare a baking dish (approximately 20 cm × 30 cm) and line it with baking paper.

Prepare the filling: Pit the plums and cut them into sixths. Place them in a small bowl, add the frozen berries and cinnamon. Mix well and set aside.

Prepare the dough: Separate the eggs. Place the yolks in a medium bowl and the whites in a tall mixing container. Add 60 g of brown sugar to the yolks and beat until you get a light-colored foam. Beat the egg whites until almost stiff, then add the remaining 30 g of brown sugar and continue beating until you get a firm and glossy meringue.

Chef's tip

For an even more intense flavor, you can add a little grated organic lemon zest to the dough.
