Preparation method
Ingredients overview
- 300 g of fresh or frozen strawberries
- 100 g of unsalted butter
- 2 pcs of eggs size M
- 50 g of liquid honey
- 100 g of fermented cream 12% fat
- 300 ml of semi-skimmed milk 1.5% fat
- 400 g of fine whole spelt flour
- 2 teaspoons of baking powder for cakes
- 50 g of brown cane sugar
- 1 pc of baking paper
Preheat the oven to 180 °C. Prepare a baking tray (approximately 30 cm × 40 cm) and line it with baking paper.
Clean the strawberries and cut them in half. Put the butter in a small saucepan and melt it over low heat (this will take approximately 2-3 minutes). In a large bowl, mix the eggs with the melted butter, honey, fermented cream, and milk. Sift the spelt flour and baking powder over the liquid mixture, add the brown sugar, and mix everything until you get a smooth batter.
Pour the batter into the prepared tray, evenly distribute the strawberry halves on top, and bake for 35-40 minutes at 175-180 °C. After baking, let the cake cool for about an hour before cutting it into 10 portions and serving.
Chef's tip
If using frozen strawberries, do not thaw them before placing them on the batter, to avoid excess liquid.
