Ingredient preparation and marinating
Cut the boneless chicken thighs into bite-sized pieces (about 3 cm).
In a spacious bowl, prepare the marinade: mix the Gochujang chili paste, soy sauce, sesame oil, finely minced garlic, and finely grated ginger. Add the chicken pieces to the marinade, mix thoroughly, and let marinate for 15-20 minutes.
Meanwhile, prepare the vegetables: cut the white cabbage into wide strips (about 3-4 cm pieces), peel the sweet potatoes and cut them into thin rounds or matchsticks, and slice the spring onions diagonally into 4-5 cm pieces (reserving a bit of the green part for garnish).
Chef's tip
For an authentic Korean street food experience, you can sprinkle shredded mozzarella on top during the last 2 minutes of cooking and cover the pan with a lid until the cheese melts (known as Cheese Dakgalbi).
If you have sauce and a few pieces left in the pan at the end, add a portion of cold cooked rice and some kimchi, frying them together for the most delicious fried rice (Bokkeumbap).
