Sezamo
Preparation method
Marinating and tzatziki preparation
Cut the boneless chicken thighs into thin strips. Place them in a bowl and add 2 tablespoons of extra virgin olive oil, 2 crushed garlic cloves, dried oregano, sweet paprika, the juice of half a lemon, 1 teaspoon of sea salt, and a pinch of ground black pepper. Mix well and let marinate for 10 minutes.
For the tzatziki sauce, coarsely grate the cucumber and squeeze it very well with your hands to remove excess water. In a bowl, combine the Greek yogurt with the squeezed cucumber, the third finely crushed garlic clove, 1 tablespoon of olive oil, and 1 teaspoon of lemon juice. Season with a pinch of salt and mix.
Cooking and serving
Heat a large skillet over high heat. Add the chicken strips in a single layer (in batches if needed) and fry for 6-8 minutes, turning them until nicely browned and crispy around the edges.
Chef's tip
For a browned and crispy crust, fry the chicken over high heat without overcrowding the pan, so that the meat browns quickly instead of boiling in its own juices.
Thoroughly squeezing the grated cucumber is the key to a thick, creamy tzatziki sauce that will not become watery.
