Flautas mexicane aurii și extrem de crocante, umplute cu o compoziție aromată de fasole neagră, porumb dulce și brânză Cheddar topită. Se rumenesc rapid în tigaie și se servesc cu smântână răcoroasă, salsa proaspătă de roșii și coriandru proaspăt.

Preparing the filling

Drain and rinse the black beans and sweet corn thoroughly. Finely chop half of the red onion and the 2 garlic cloves.

In a large bowl, partially mash the black beans with a fork to achieve a creamy texture with some whole beans remaining. Add the corn, chopped onion, garlic, ground cumin, smoked paprika, a teaspoon of salt, and shredded Cheddar cheese. Mix the ingredients well.

Rolling and browning the flautas

Warm the tortillas gently in a dry skillet for 10-15 seconds per side so they become soft and easy to roll.

Chef's tip

For a lighter option, you can bake the rolls in a preheated oven at 200°C for 15-18 minutes after brushing them with a little oil.

Keep the mixture well seasoned; the beans absorb flavors quickly, while the lime juice provides a fresh, balanced contrast.
