Un clasic veritabil al gastronomiei stradale mexicane prehispanice: bărcuțe fragede din aluat de porumb umplute cu pastă aromată de fasole neagră, rumenite la tigaie și decorate cu telemea, smântână, roșii și coriandru proaspăt.
Preparation method
Preparing the black bean paste
Finely chop the yellow onion and garlic. Drain the black beans.
Heat 15 ml of olive oil in a pan over medium heat. Sauté the onion and garlic for 3-4 minutes until translucent and fragrant.
Add the black beans, ground cumin, and a pinch of salt. Mash the beans with a fork or a potato masher, cooking for 4-5 minutes until you obtain a thick and smooth paste. Allow the paste to cool slightly.
Chef's tip
To shape the tlacoyos without cracking the corn dough, keep your hands lightly moistened with water while filling and sealing.
Tlacoyos are an iconic central Mexican street food dating back to pre-Hispanic times; if you prefer a spicy kick, top them with salsa verde or drops of hot pepper sauce.
