Preparation method
Wash the potatoes well and boil them in salted water until they become soft (about 25 minutes). Check if they are done by piercing them with a sharp knife – it should slide in easily, like into wax.
Drain the water and let the potatoes cool slightly, uncovered, for about 10 minutes to allow excess moisture to evaporate.
Preheat the oven to 180°C. Cut the Cheddar cheese into thin slices, about the size of a child's palm. Cut each potato lengthwise, up to about two-thirds deep. Insert a slice of cheese into the cut, wrap the potato in a slice of bacon, and secure everything by piercing transversely with a sprig of rosemary.
Chef's tip
For best results, use potatoes of similar size to cook evenly. If the rosemary is too tender to pierce the potato, you can use a toothpick to secure the bacon and place the rosemary on top.
