- 500 g skinless chicken breast
- 1 medium egg
- 60 ml semi-skimmed milk
- 60 g parmesan
- 50 g superior white wheat flour 000
- 70 g breadcrumbs
- 200 ml rapeseed oil
- 1 teaspoon of sweet paprika
- 1 pinch of table salt
- 1 pinch of ground black pepper
Preparing the meat
Start by preparing the chicken: slice the chicken breast lengthwise to get thinner slices and season them with salt.
Preparing the breading and frying
Prepare three shallow bowls: in the first, put the flour mixed with 1/2 teaspoon of salt, pepper, and sweet paprika. In the second bowl, whisk the egg with the milk and a pinch of salt. In the third bowl, mix the breadcrumbs with the finely grated parmesan.
In a deep pan, pour the oil (about 0.5 cm) and heat it well. Dredge each piece of chicken first in the flour, then dip in the egg mixture, and finally coat in the parmesan breadcrumbs, pressing gently so it adheres well. Fry the schnitzels over medium heat for 2-4 minutes on each side, until golden and crispy.
