Cut the boneless chicken thighs into bite-sized pieces and pat them dry with a paper towel. Finely chop the yellow onion and crush or finely slice the fresh garlic cloves.
Browning the meat and cooking the sauce
In a deep saucepan or large skillet, heat 30 ml of sunflower oil over medium heat. Add the chicken pieces and brown them nicely on all sides for 6-8 minutes until golden brown, then temporarily transfer them to a plate.
In the same pan, add the chopped onion and sauté for 3-4 minutes until translucent. Add half of the sliced garlic and sauté for another 1 minute until fragrant.
Chef's tip
For an authentic tasting ostropel, adding garlic in two stages ensures both a sweet, velvety base and a fresh, bold note at the end.
If you want an even more flavorful sauce, you can deglaze the browned meat with 50 ml of dry white wine before adding the tomatoes.
