Cut the boneless chicken thighs into bite-sized pieces (about 3-4 cm).
In a large bowl, combine the Gochujang paste, soy sauce, sesame oil, brown sugar, crushed garlic, and finely grated ginger. Mix well until you get a smooth, glossy paste.
Add the chicken pieces to the marinade, massage them gently to coat evenly, and leave them to marinate for 10-15 minutes at room temperature.
Chef's tip
Korean street food tip: If you want the viral 'Cheese Dakgalbi' version, make a trench down the middle of the pan when the food is ready, add 100 g of shredded mozzarella, cover with a lid for 2 minutes until the cheese melts, and dip the spicy chicken pieces directly into the melted cheese!
The sweet potato should be cut into matchsticks no thicker than 0.5 cm to cook perfectly in the same time as the chicken.
