Preparing the ingredients and batter
Cut the boneless chicken thighs into thin strips or small cubes (about 1-2 cm). Finely chop the white cabbage, and slice the spring onions into thin rings, reserving a tablespoon of the green rings for garnish.
In a small bowl, prepare the okonomiyaki sauce by mixing 2 tablespoons of ketchup with 1 tablespoon of Worcestershire sauce and 1 teaspoon of soy sauce until you get a smooth, sweet and sour, glossy brown glaze.
In a large bowl, whisk the eggs together with the remaining soy sauce and 60 ml of cold water. Gradually add the plain wheat flour and mix gently with a whisk until you get a smooth batter without lumps.
Chef's tip
The secret to a perfect Okonomiyaki is not to press down on the pancake with the spatula while it cooks; the steam inside gives it an incredibly fluffy texture, contrasting with the crispy exterior.
To create thin, neat lines of mayonnaise, put the mayonnaise in a small freezer bag and snip off a tiny corner.
