Cheese Buldak (pui de foc cu brânză) este una dintre cele mai spectaculoase și populare mâncăruri de street food din Coreea de Sud: bucăți fragede de pui scăldate într-un sos picant și caramelizat de gochujang, acoperite generos cu mozzarella topită și întinsă.

Preparing the chicken and spicy sauce

Cut the boneless chicken thighs into bite-sized cubes of about 3 cm. Peel the garlic and crush it finely, and finely grate the fresh ginger. Slice the green onions diagonally, separating the white part from the green part.

In a bowl, mix the gochujang paste, soy sauce, polyfloral honey, sesame oil, garlic, and ginger until you get a deep red, glossy, smooth sauce. Add the chicken to the bowl, toss well to coat every piece, and marinate for 10-15 minutes.

Pan-cooking and melting the cheese

Heat a large cast-iron skillet over medium heat with the sunflower oil. Add the marinated chicken along with all the sauce and the white parts of the green onions. Cook for 8-10 minutes, stirring occasionally, until the chicken pieces are tender and cooked through, and the sauce becomes thick and caramelized.

Chef's tip

If you want a browned crust on top of the mozzarella, you can use a kitchen torch directly over the cheese right before serving, just like at the night food stalls in Seoul.

If the heat level of the gochujang paste is too intense for your taste, add an extra tablespoon of honey and serve the dish alongside a bowl of simple steamed white rice.
