Cut the chicken breast into bite-sized pieces (about 3 cm cubes). Clean the leeks, rinse them thoroughly under cold running water to remove any traces of soil, and slice them into thick rounds of about 1.5 cm. Crush and finely chop the garlic cloves.
Pan Cooking
Heat 2 tablespoons of extra virgin olive oil in a spacious pan over medium-high heat. Add the chicken breast pieces and brown them for 5-6 minutes until they get an appetizing golden crust. Temporarily transfer the meat to a warm plate.
In the same pan, add the remaining tablespoon of olive oil and the leek rounds. Sauté the leeks over medium heat for 4-5 minutes, stirring occasionally, until they soften and begin to caramelize slightly around the edges. Add the minced garlic and dried oregano, sautéing for another minute until fragrant.
Chef's tip
For the perfect Mediterranean touch, you can crumble a little feta cheese over the top at the end.
Wash the leeks thoroughly between layers and drain them on a kitchen towel before frying to ensure optimal golden browning.
