Cut the boneless chicken breast into bite-sized pieces of 3-4 cm. Wash the leeks thoroughly and cut them into rounds of about 1.5 cm. Crush and finely mince the garlic cloves, and finely grate some zest from the lemon, then squeeze its juice.
Season the chicken breast pieces with half of the sea salt, ground black pepper, and dried oregano.
Skillet cooking
Heat the extra virgin olive oil in a large skillet over medium-high heat. Add the chicken pieces and brown them for 5-6 minutes until golden on all sides, then remove them temporarily to a warm plate.

Wash the leeks by gently peeling back the outer leaves to remove any traces of soil; use both the white and light green parts for a perfect balance between sweetness and texture.
