Preparing the meat and the Nanban sauce
Cut the boneless chicken thighs into bite-sized pieces (about 3-4 cm). Season the meat with a pinch of table salt and ground black pepper.
In a small saucepan, combine the soy sauce, rice vinegar, and granulated white sugar. Place over low heat and stir until the sugar is completely dissolved, then remove from the heat and let the Nanban sauce cool down.
Preparing the Japanese tartar sauce
Boil one of the 2 chicken eggs for 9-10 minutes until hard-boiled. Cool it in cold water, peel it, and finely mash it with a fork.
Chef's tip
Dipping the hot chicken pieces directly into the sweet and sour Nanban sauce allows the meat to deeply absorb the flavors while keeping it juicy.
For extra freshness and crunch in the tartar sauce, you can add a finely chopped small pickled gherkin along with the spring onion.
