Preparation method
Preparing the wings and the tare sauce
Pat the chicken wings dry with paper towels to remove any excess moisture. This step is essential to achieve an ultra-crispy texture.
In a bowl, dust the wings with cornstarch, ensuring they are evenly coated in a very thin layer. Shake off any excess starch.
In a small saucepan, combine the soy sauce, polyfloral honey, rice vinegar, finely crushed garlic, and finely grated ginger. Place the mixture over medium heat and bring to a simmer for 2-3 minutes, until the sauce thickens slightly and turns glossy. Set aside.
Chef's tip
The authentic Tebasaki secret lies in the double frying: the first stage cooks the meat thoroughly, while the second stage renders the fat from the skin and creates that legendary crispy crust that stays crunchy even after glazing.
Don't hold back on the black pepper: the Nagoya style is famous precisely for its bold, spicy aroma of freshly ground pepper, which balances the sweetness of the honey soy sauce.
