Chalupas poblanas sunt o emblemă a mâncării stradale din Puebla, Mexic: mici bărcuțe crocante din tortillas rumenite în ulei, acoperite cu sos aromat salsa roja din roșii coapte, fâșii fragede de vită suculentă, telemea sfărâmată, ceapă proaspătă și coriandru. Un deliciu vibrant și plin de savoare!

Preparing the beef and salsa
Cut the beef into medium-sized pieces. Place it in a pot to simmer with half a yellow onion, 2 garlic cloves, half a teaspoon of salt, and half a teaspoon of cumin. Cover with water and simmer over low heat for 35-40 minutes until very tender, then shred it into thin strips using two forks.
For the salsa roja, boil the tomatoes and the remaining 2 garlic cloves for 6-7 minutes until the skins split. Peel the tomatoes and transfer them to a blender along with the boiled garlic, the remaining salt, and ground cumin. Blend until smooth to achieve a rich and aromatic sauce.
Browning the chalupas and assembling
Finely dice the remaining yellow onion, finely chop the fresh coriander, and crumble the cow's milk telemea.

The secret to an authentic texture is quickly frying the tortilla: the edges turn crispy, while the center stays pliable and absorbs the warm sauce perfectly.
You can also add a fresh or dried chili pepper to the salsa if you prefer a spicier kick.
