Cut the white fish fillet into uniform, generous cubes, about 3-4 cm in size. If using wooden skewers, soak them in cold water for 15 minutes to prevent them from burning in the oven.
In a bowl, prepare the aromatic marinade: mix the ground turmeric, half of the finely grated garlic and ginger, 15 ml of soy sauce, 15 ml of sunflower oil, and the juice of 1 lime. Add the fish cubes, gently toss, and let marinate in the refrigerator for 15 minutes.
Rinse the Jasmine rice under cold running water until the water runs clear. Bring it to a boil with 350 ml of water and a pinch of salt. After it starts boiling, cover with a lid, reduce the heat to low, and simmer for 12 minutes. Turn off the heat and leave it covered to rest.
Chef's tip
Opt for a meaty, firm white fish such as cod, pike-perch, or sea bass, which holds its shape well on skewers without falling apart.
If the Satay sauce reduces too much over low heat, add 1-2 tablespoons of warm water or coconut milk to restore its fluidity and gloss.
