Preparing the ingredients
Cut 600 g of boneless chicken breast into thin strips or 2-3 cm bite-sized cubes. Season the meat with 5 g of sea salt, 2 g of ground black pepper, and half of the 5 g of dried oregano.
Peel and thinly slice 1 piece of red onion. Crush and finely mince 3 cloves of fresh garlic. Wash 1 lemon, finely grate the yellow zest, and squeeze 2 tablespoons of fresh juice. Finely chop the leaves from 1 bunch of fresh dill.
Cooking in the pan
Heat 30 ml of extra virgin olive oil in a large pan over medium-high heat. Add the chicken breast strips and sauté them for 6-7 minutes, turning them on all sides until golden and evenly browned.
Chef's tip
To achieve a perfectly velvety yogurt sauce that does not split, it is essential to use full-fat Greek yogurt (10%) at room temperature and reduce the heat to low before incorporating it.
If you want an even more flavorful sauce, you can marinate the chicken strips beforehand for 15 minutes with a little olive oil, oregano, and lemon juice before cooking.
