Preparing the Mixture
Start by finely grating the cheddar cheese and Parmesan. Peel the garlic and grate it very finely as well.
In a small saucepan, pour the water and add the butter. Place the saucepan over medium heat and bring the mixture to a boil. As soon as it starts to boil, reduce the heat to low, add the whole spelt flour, and cook the mixture, stirring continuously until a dense dough forms that detaches from the sides of the saucepan – this process will take approximately 10–13 minutes. At that point, turn off the heat and incorporate the grated cheddar cheese, Parmesan, garlic, salt, and pepper into the dough. Transfer the solid dough to a bowl and let it cool for at least 30 minutes.
Baking and Serving
Once the dough has cooled, preheat the oven to 180–185 °C. Prepare a baking tray and line it with baking paper.
Chef's tip
For extra flavor, you can add a little dried thyme or smoked paprika to the dough.
