Separate the egg into yolk and white. Keep the egg white aside for later.

In a small bowl, crumble the fresh yeast, add the lukewarm milk, and mix well until the yeast is completely dissolved. Note: the milk must not be hot, otherwise the yeast will lose its properties.

In a large bowl or the bowl of a stand mixer, mix both types of flour (wheat and buckwheat), salt, and ground black pepper. Add the egg yolk and the milk-yeast mixture. Knead at medium speed for about 5 minutes until you get a smooth and homogeneous batter. Cover the bowl with a clean towel and let it rise in a warm place for an hour.

Chef's tip

For best results, use a well-heated cast-iron skillet. For a modern twist, you can replace the caviar with thin slices of smoked salmon. Don't forget to let the batter rest long enough to achieve that characteristic fluffy texture.
