INGREDIENTS
- 100 g of superior 000 white wheat flour
- 100 g of unsalted butter 82% fat, cut into cubes and cold
- 100 g of Parmesan, finely grated
- 1/4 teaspoon of iodized table salt
- 1 pinch of cayenne pepper powder (optional)

PREPARATION METHOD
- 1In a large bowl, mix the flour, salt, and cayenne pepper powder (if you choose to use it). Add the cold butter cut into cubes and, using your fingers or a pastry blender, incorporate the butter into the flour until the mixture resembles coarse breadcrumbs. Add the finely grated Parmesan and mix well.
- 2If the dough is too dry and doesn't come together, add a tablespoon of cold water and mix quickly. Form the dough into a ball, wrap it in cling film, and let it rest in the refrigerator for 30 minutes.
- 3Preheat the oven to 180°C. On a lightly floured surface, roll out the chilled dough to a thickness of approximately 3-4 mm. Use a cookie cutter (round or any other shape you prefer) to cut out the crackers. Carefully transfer them to a baking tray lined with baking paper.
- 4Bake the crackers in the preheated oven for 10-12 minutes, until they are golden brown at the edges. After baking, let them cool completely directly on the tray to become crispy.
Tip
For an even more intense flavor, you can add a little dried thyme to the dough or sesame seeds on top before baking.
