- 180 g of carrots
- 1 pc of green onion
- 50 g of superior 000 white wheat flour
- 2 pcs of chicken eggs
- 2 pcs of garlic (for fritters and dip)
- 1 pc of fresh thyme (or dried)
- 2 pinches of iodized table salt (for fritters and dip)
- 1 pinch of ground black pepper
- 150 g of semi-skimmed cottage cheese
- 1 handful of fresh parsley
Peel the carrots and grate them finely. Place them in a bowl and add the finely chopped green onion, one crushed garlic clove, thyme leaves, eggs, and flour. Season with salt and pepper, then mix everything until you get a homogeneous and slightly sticky dough.
Heat a pan with a sufficient amount of oil. When the oil is hot, form fritters from the dough and place them in the pan. Fry them on both sides until golden and cooked through. Remove them to a plate lined with paper towels to absorb excess oil.
Finally, prepare the dip. Mix the cottage cheese with the second crushed garlic clove and finely chopped parsley. Adjust for salt and mix well. Serve the warm fritters with the creamy cheese dip.
