Preparation method

Preparing the quinces

Wash the quinces thoroughly under cold running water to completely remove the fine fuzz from the skin, then pat them dry with a clean kitchen towel.

Cut the quinces into quarters, remove the woody core and seeds, then slice them into even slices about 1-1.5 cm thick. Immediately drizzle them with freshly squeezed lemon juice to preserve their golden color.

Caramelizing and simmering

In a deep saucepan or a wide skillet, melt the butter over medium heat together with the granulated white sugar. Stir occasionally until the sugar melts completely and turns into a beautifully fragrant, golden-copper caramel.

Chef's tip

For extra flavor, you can lightly toast the walnut kernels in a dry pan for 2 minutes before serving to make them extra crunchy.

The dessert is wonderful served on its own or alongside a spoonful of rich Romanian sour cream or a scoop of vanilla ice cream.
