Preparation method

Finely chop the red onion. Peel the garlic, cut it in half lengthwise to remove the central germ, then grate it finely or crush it. Finely chop the chili pepper.

Quarter the tomatoes and remove the hard core, including the seeds. Dice the tomato flesh into small cubes.

In a bowl, mix the onion with the vinegar, lemon juice, and garlic. Add the diced tomatoes, aromatic herbs (parsley, basil, thyme), and olive oil.
