Preparation method
Preparing and Marinating the Fish
In a bowl, mix 150 ml of olive oil, crushed garlic, chopped aromatic herbs (sage and thyme), brown sugar, finely chopped chili pepper, and half of the salt. Marinate the sea bass fillets in this mixture for at least three hours in the refrigerator.
Confit the Fish
Preheat the oven to 150 degrees Celsius (top and bottom heat). Transfer the fish along with all the marinade to a small baking dish and bake for 30 minutes, until the fish is tender.
Preparing the Roasted Pepper Salad
Preheat the oven to 240 degrees Celsius on the grill function. Wash the peppers and place them whole on a baking tray lined with baking paper for about 30 minutes. Turn them a few times during baking until the skin turns black on all sides.
