Preparation method
Preparing the filling and the pan
Preheat the oven to 180 °C. Prepare a baking pan (approximately 20 cm × 30 cm) and line it with parchment paper.
Prepare the filling: pit the plums and cut them into sixths. Place them in a small bowl along with the frozen berries and ground cinnamon. Mix well and set aside.
Preparing the dough and baking
Separate the eggs: place the yolks in a medium bowl and the whites in a tall mixing container. Add 60 g of brown sugar to the yolks and beat until airy and foamy. Beat the egg whites until almost stiff, then add the remaining 30 g of brown sugar and continue beating until you get a firm and glossy meringue.
Chef's tip
For extra texture, you can sprinkle a few almond flakes over the fruit before baking.
